Roast Carrot, Avocado + Mozzarella Salad
As it says...
put together roast carrots, avocado, mozzarella, leaves and salad...
/Oil tray - put carrots in on a slow roast, seasoned with seasoning and a touch of honey maybe.
Slice avocado,
Tear Mozzarella
Gently mingle all your stuff together.
The Dressing... Basis (a pint) - 1/3 white wine or cider vinegar, to 2/3 sunflower oil
2 tbl spoons of caster sugar - 1 tbl spoon of dijon - pinch of salt - plenty of pepper
hand whizz this.
Then it can be plus some citrus zest, or wholegrain mustard, or honey, or sharpened with less sugar, or marinade sump residue - olive brine - herbified stuff the oil that some peppers were roasted in etc.
best not to refrigerate your dressing.
