Italian Bean Casserole

Italian Bean Casserole

Ingredients:

Onions (8ish)

Courgettes (4)

1 medium (ish) sized bowl of chopped peppers any colour that tickles yer fancy

1 tin chopped tomatoes 1spn vegetable stock

5 cans of 5 bean salad.

Method:

Cook the onions, courgettes and peppers in a pan, on a low heat till soft. 

Add the tomatoes and vegetable stock, and cook for 20 minutes.

Drain and rinse the bean salad, add to the pot and cook for a further handful of minutes.
